{"id":5198,"date":"2016-04-29T15:32:01","date_gmt":"2016-04-29T14:32:01","guid":{"rendered":"https:\/\/bantuat.org\/?p=5198"},"modified":"2018-09-18T14:16:40","modified_gmt":"2018-09-18T13:16:40","slug":"sharon-peck-centre-for-nutrition-education-lifestyle-management-cnelm","status":"publish","type":"post","link":"https:\/\/bant.org.uk\/sharon-peck-centre-for-nutrition-education-lifestyle-management-cnelm\/","title":{"rendered":"Sharon Peck, Centre for Nutrition Education &#038; Lifestyle Management (CNELM)"},"content":{"rendered":"<p><img decoding=\"async\" class=\"wp-image-5201 alignleft\" src=\"https:\/\/bant.org.uk\/wp-content\/uploads\/2016\/04\/recent-me.jpg\" alt=\"recent me\" width=\"279\" height=\"281\" \/>As a young adult, my diet was mainly based around cheese on toast and pasta.\u00a0 Indeed, I considered cheese, bread and chocolate to be the culinary holy trinity and felt immensely sorry for friends that couldn&#8217;t tolerate lactose so missed out on the delights of cheese.<\/p>\n<p>This happy ignorance was shattered after being diagnosed with an autoimmune condition (multiple sclerosis) 9 years ago.\u00a0 I quickly realised there was no magic pill, but heard that people were using food as medicine. \u00a0My journey of nutritional discovery had begun.<\/p>\n<p>I cut out gluten, legumes and dairy to start with.\u00a0 So no cheese on toast, what would I eat!\u00a0 Refining my diet involved a lot of nutritional research and self-experimentation.\u00a0 There was so much confusing information available. I discovered the work of Dr. Terry Wahls, an MS patient that had eaten her way out of a wheelchair.\u00a0 She advocated a paleo diet with lots of vegetables.<\/p>\n<p>I wanted to understand the science behind what worked and why so I could decipher the research.\u00a0 Then work out how it could apply to me, as a individual, rather than relying on the generalised interpretation of others.\u00a0 I was in the consciously incompetent phase of learning and I wanted to learn more.<\/p>\n<p>My career as a software consultant began to seem boring against my new found passion for nutrition. \u00a0So, I took steps towards a career as a nutritional therapist.\u00a0 I did a science access course prior to starting the Nutritional Science degree.<\/p>\n<p>So, 10 years on from the height of my cheese on toast days and I\u2019ve learnt the healing power of food.\u00a0 My plate is always piled high with vegetables.\u00a0 As an occasional treat, I\u2019ll make vegan, paleo cauliflower bread and have it with some coconut cheese.\u00a0 Student food \ud83d\ude09<\/p>\n<p><strong>Sharon Peck is a 2nd\u00a0year student on the Nutritional Science BSc at CNELM.
